On Christmas morning, I woke up (too early), and, after a cup of coffee, got to work on breakfast. With "A Christmas Story" playing behind me, I whipped up this easy, spicy, baked egg breakfast casserole. As Ralphie and his family were sitting down to Christmas dinner at their local Chinese restaurant, we were enjoying our Christmas breakfast in bed.

1/2 sweet green pepper, diced
1/2 sweet red pepper, diced
1/2 onion, diced
1 jalapeno, diced
3 tablespoons of butter
4 small sausage links, already cooked and cut into small pieces (I used Hormel's Hot and Spicy Little Sizzlers)
Cayenne, to taste
Ground black pepper, to taste
Sharp cheddar cheese
Salsa or hot sauce (optional)
Melt butter in your loaf pan.
Add diced veggies and let them cook until soft, stirring occasionally.
Drop sausage pieces over the veggies.
Scramble your eggs and pour over the veggie mixture.
Sprinkle black pepper and cayenne on top.
Cook at 350 degrees until a toothpick inserted into the eggs comes out clean, approximately 45 minutes.
Add cheese to the top and let it melt.
Serve with salsa or hot sauce and enjoy!
