Slow Cooker Christmas Dinner

As you may have read, our first gig when we first started travelling full-time in our RV was selling Christmas trees in Memphis. During that time we worked twelve hours a day, so I cooked two meals a day, seven days a week, for nearly 45 days straight in my 2.5 quart slow cooker. Some meals were fairly basic, but some of them were a little more creative. I have continued to use the crock pot for most of our meals, and at Marvin's urging, I will be sharing some of my better meal ideas with you from time to time. Hopefully they will be helpful for you, whether you are living in an RV as we are, or you are a busy parent or an on-the-go business professional.

So, without further ado, I give you my first slow cooker recipe.

One-Dish Christmas Dinner

Ingredients:
one can French cut green beans
one can cream of mushroom soup
approximately 1/4 cup of onion, sliced thin
garlic powder, to taste
black pepper, to taste
cayenne, to taste (optional) 
8 oz. of ham (I made this first using a Smithfield's Anytime boneless ham steak, but I've made it with cubed cooked ham as well)

one medium sweet potato, peeled and cubed

All Prepped and Ready to Go!
Directions:
​Pour green beans, mushroom soup, onion, garlic powder, pepper, and cayenne into crock pot and stir.
Layer ham, then sweet potato on top, cover and let it go.
* I add a little extra cayenne on top to give the sweet potato a nice kick.
Cook on high for the first couple hours, then on low for the last couple, if possible.
Marvin is not a huge fan of sweet potato, but the mushroom soup seeps into the sweet potato, taking some of the sweetness out of it, and he loved this dish. I substituted a white potato when I made it the next time, and that was quite tasty as well.

And, if I had a larger slow cooker, I might add a can of corn as well. If you try this, please let me know how it turns out!
