As you may have read, our first gig when we first started travelling full-time in our RV was selling Christmas trees in Memphis. During that time we worked twelve hours a day, so I cooked two meals a day, seven days a week, for nearly 45 days straight in my 2.5 quart slow cooker. Some meals were fairly basic, but some of them were a little more creative. I have continued to use the crock pot for most of our meals, and at Marvin's urging, I will be sharing some of my better meal ideas with you from time to time. Hopefully they will be helpful for you, whether you are living in an RV as we are, or you are a busy parent or an on-the-go business professional.
So, without further ado, I give you my first slow cooker recipe.
As we mentioned in our last post, our Christmas present to ourselves was a six-night vacation in the Central American country of Belize. Having traveled in Central America before, we had a general idea of what to expect.
After landing at Philip S. W. Goldson Airport just outside Belize City, we hired a taxi driver to take us into the city. Driving along the highway along the Belize River and then through the city, we noticed similarities in this landscape and that of Mexico, Honduras, and Panama.
Taking the Plunge
In September, we decided to take the plunge and buy a travel trailer so that we could pursue our long-time goal of hitting the road and exploring the good old US of A. We knew our lease would end October 31st, so we sold everything we could, carefully selected the tools, clothes, and household items we would keep in our camper, donated a tremendous amount of general household clutter, and put the rest into storage.
